Which is part of the reason that I am on a diet...
So when I find a healthy pasta recipe, I get a little giddy inside!
Today, I've got a chicken Florentine pasta for you...and it is scrumptious!
And even better...only 332 calories per serving!

Chicken Florentine
Season chicken with 1/2 tsp salt and 1/2 tsp pepper. Cook chicken over medium heat until cooked through. Once cooked, cut chicken into strips. Cook pasta according to package directions. When cooked, drain and keep warm. In a large, non-stick skillet, heat oil. Add flour and garlic and cook until garlic is browned, stirring constantly. Whisk in milk and broth and simmer until thickened. Add cheese and stir until melted. Add remaining salt, pepper and spinach and stir until spinach wilts. Remove from heat. Add pasta and chicken - toss well to coat. Enjoy!
