Recipe: Chicken, Macaroni and Cheese

It's no secret that I am obsessed with macaroni and cheese.
Being on a diet, though, doesn't allow me to eat it as often as I prefer...you know, daily.
But what if I found a healthy macaroni and cheese recipe?
Then I could have it for dinner at least once a week, right?
Well, I say yes...and that is just what I found!
I know, I know....healthy macaroni and cheese...gross!
But this recipe is amazing! It is so yummy!!
The best part...only 369 calories per serving!
The original recipe, found here, calls for tomatoes...but I left those out.


Chicken, Macaroni and Cheese
  • 1 1/2 cups dried multi-grain or regular elbow macaroni
  • 12 ounces boneless, skinless chicken breasts cut into 1 inch pieces
  • 1/4 cup finely chopped onion
  • 1 (6.5 ounce) package light semi-soft cheese with garlic and herb
  • 1 2/3 cup fat-free milk
  • 1 Tbsp. all purpose flour
  • 3/4 cup shredded reduced fat cheddar cheese
  • 2 cups packaged fresh baby spinach

Cook macaroni according to package directions, omitting any salt, and drain.

Spray a large, non-stick skillet with cooking spray. Heat over medium-high heat. Add chicken and onion to skillet and cook 4-6 minutes, or until chicken is no longer pink. Reduce heat if needed to prevent onion from over-cooking. Once chicken is cooked, remove from heat and stir in semi-soft cheese. Stir until melted.

In a bowl, whisk together the flour and the milk, then add to the chicken mixture. Mix well. Cook over medium heat until thickened and bubbly, stirring frequently. Reduce heat to low and stir in cheddar cheese until melted. Add cooked macaroni and cook until heated through, about 1-2 minutes. Stir in spinach until wilted. Enjoy!
